Source and Preparation
This product is made of wheat starch, corn starch, white starch or starch. Its suspension is liquefied and hydrolyzed by amylase at a high temperature. When the glucose is 10-20, the pH and temperature are adjusted, and then glucose amylase is used to convert to glucose. When this product is quantitatively measured, it contains fructose (C6H12O6:180.16) 53.0-58.0% and glucose (C6H12O6:180.16) 37.0-42.0%.
