Source and Preparation
This product is naturally found in various animal and plant proteins, especially in beet molasses. Commercially available products are usually made by hydrolyzing various proteins rich in the product with acid, neutralizing them with calcium hydroxide to form calcium salts, and then separating them. It can also be prepared by enzyme addition of ammonia to fumaric acid.
